I made a quick video showing our question regarding setting up custom domain publishing. The video shows problems we have doing the config using serverpilot on DigitalOcean as well as a question about when you actually press the button to publish.

We were looking at using Cloudways for managed DigitalOcean hosting and they say that we have to add each domain in the backend. I linked to the page where you explain how this is done but they kept saying it's not possible, which makes me wary about using them. See their response below. However we don't want to do self hosted DigitalOcean as it's not a good idea unless you hire someone to manage your server security and things like that.
"Please note that you will have to manually add the domains in platform else the domain might not map correctly you can try launch single MU site on a server and set default app in apache settings it will redirect all map domain to the default app
if following this process if your domain are mapping correctly then you can follow this process"-
